Food Swings: Grilled Green Beans
By Jake Mathias
We grill just about everything on the BBQ in our back yards.
The food is always good when its freshly prepared, and sometimes even after several days in the fridge.
This spring we decided to try grilling fresh green beans from our garden- and it was fantastic.
The following recipe works only for fresh green beans, so if you don’t have access to a garden, you’ll have to visit a farmer’s market or produce section of the grocery store. Beans should be firm and crisp before you grill, or they’ll become limp as you cook.
The marinade also works for grilled broccoli and asparagus.
You will need:
Fresh green beans, washed and patted dry
2 T olive oil
2 T lemon juice
1/2 t of each: garlic powder, salt and pepper
Parmesan cheese, to taste.
Directions:
Add ingredients to a one- quarter Ziploc baggie, marinate for about 10 minutes. Grill 2-3 minutes per side. Sprinkle with cheese and enjoy.
